The Ispahan flavor combination, undoubtedly the most famous and emblematic of Maison PIERRE HERMÉ PARIS, was created in cake form in 1997. Everything started from Pierre Hermé who discovered the taste of rose in Bulgarian cuisine in 1985. Back then, this ingredient remained largely overlooked in the realm of French patisserie. Determined, he embarked on a journey to unravel its essence, to harness its flavors, to explore its nuances, and to uncover its potential companions in aroma. A revelation struck him with the juxtaposition of the fruity vigor of raspberry against the delicate notes of rose, inspiring the birth of the "Paradis" cake at Fauchon in 1987, albeit initially greeted with mixed reception. Yet, undeterred, the pastry chef remained steadfast in his belief in this daring fusion. Years later, a sip of Alsatian wine unveiled to Pierre Hermé the rose-like essence hidden within lychee. Revisiting the blend with a desire for more depth, he introduced lychee into a textured concoction, birthing the exquisite Ispahan. Ispahan, a symphony of flavors marrying rose, raspberry, and lychee, captivates with the sweet allure of rose, the tartness of raspberry, and the floral subtlety of lychee. The name itself echoes the essence of both a rose variety and a city in Iran renowned for its stunning gardens.
